The ingredients for this dish are truly heavenly. You’ll need unsalted butter, carrots, celery, parsnip, all-purpose flour, chicken broth, baking powder, buttermilk, and shredded, skinless rotisserie chicken. For seasoning, you’ll need kosher salt, ground black pepper, chopped fresh dill, a bay leaf, and chopped fresh chives. Once you’ve gathered all of these yummy items, you’re ready to start cooking!
Directions
You’ll want to start by heating three tablespoons of the butter in a large Dutch oven, or any kind of wide pot, over medium-high heat. Then add the celery, parsnip, bay leaf, carrots, salt, and pepper. Cook until the vegetables are soft, which is usually about five minutes. Add flour and cook for another minute. Slowly add in the chicken broth and bring to a boil. Reduce to a simmer and cook for 10 to 12 more minutes.
While that is cooking, in a separate medium bowl, whisk a cup and a half of the flour with salt and baking powder. Grab your remaining butter, cut it up into small pieces, and roll it in the mixture. Stir in buttermilk and herbs and divide the dough into 12 half-inch dough balls.
Stir your chicken in the Dutch oven and add the dough balls. Cover and cook over medium-high heat for 12 to 15 minutes. Once done, serve it up and enjoy this comforting meal.
